Recipe:
1 Place your portafilter into the machine and prepare for extraction using a declining pressure profile.
2 Begin with a low-flow pre-infusion at around 3 bars for 8 seconds, allowing the coffee bed to saturate evenly.
3 Gradually ramp the pressure up to 8.5β9 bars between 8β18 seconds.
4 Maintain control and let the pressure decline slowly to 5β6 bars for the remainder of the shot.
5 Aim for a 38 g yield in approximately 35 seconds.
6 Steam milk to a light microfoam, keeping the temperature between 55β60Β°C.
7 Pour the milk over the espresso in a 1:1 ratio to finish your cortado.
