Recipe:
1 Lock your portafilter into the machine and prepare for extraction using a gentle, controlled pressure profile.
2 Begin with a low-flow pre-infusion for 8 seconds, allowing the coffee bed to saturate evenly.
3 Gradually ramp up to 9 bars between 8–18 seconds, keeping the flow steady and controlled.
4 Maintain or slightly taper the pressure through the remainder of the shot. Aim for a 36 g yield in approximately 30 seconds.
5 Add 120–140 ml of chilled tonic water to a glass. Add a few ice cubes to chill the drink.
6 Optionally, add a tiny drop of hazelnut syrup, or skip for a cleaner, brighter cup.
7 Gently pour the espresso over the tonic and serve immediately.
