This naturally-processed coffee is rich yet complex, with fruity tones and a medium body. Fruit-laden and sweet, this is a heady coffee, both aromatically and on the palate. To process it, this coffee was fermented overnight and then spread thickly on raised beds to continue secondary fermentation while drying. This gave it aromas of dried fruits (think strawberries and apricots) leading to notes of strawberry, apple, and red grape in the cup. The high acidity provides balance, resolving into a sweet and long, tea-like finish. 

Our roasting team profiled this one as a light roast to highlight its sweet and fruity flavours. If you’re a fan of our high-scoring experimental coffees like Red Fruit and Grape Fermentation from Riverdale Estate, you’ll love the complex flavours in this one! Our roasters recommend brewing this light roast as a Pour Over or using an AeroPress.

Hidden Falls Estate gets its name from a beautiful yet elusive waterfall that is hidden among an outcrop of huge rocks. Set at a very unique location, it is part of the MSP Coffee group and the estate is intercropped with jackfruit, nutmeg, cloves and Silver Oak Trees.

French Press

Brewing Method

  • Add coffee, start the timer and pour 50 ml of water and make sure all the grinds are wet.
  • After 30 seconds, top up the water to 200 ml.
  • Place the lid and slowly plunge at the 5-minute mark for 30 seconds.
  • Pour into your cup immediately after plunging to avoid over extracting the coffee.

Brewing Method

  • Pre-wet the filter paper, add coffee, and lock the cap into the chamber.
  • Start the timer and add 60 ml of water.
  • Swirl 5 times and let it bloom for 30 seconds.
  • Pour the rest of the water. Put the plunger on top and press down slightly to create a vacuum.
  • When it reaches the 3-minute mark, plunge slowly for 30 seconds to extract the flavours into the cup.

South Indian Filter

Brewing Method

  • Add coffee into the top chamber.
  • Pour hot water on the top and let it bloom for 25-30 sec.
  • Pour the remaining water and let it drip through for 9:30-10 mins.
  • You can add sugar, milk or more hot water to your liking.

Brewing Method

  • Pre-wet the filter paper, add coffee, and lock the cap into the chamber.
  • Start the timer and add 70 ml of water and stir 3-5 times.
  • After 30 seconds, add the rest of the water.
  • When it reaches the 3-minute mark, flip the AeroPress and plunge slowly for 30 seconds.

Pourover

Brewing Method

  • Rinse the filter paper with hot water to pre-heat the cone.
  • Add coffee and start the timer. Pour 60 ml of water and swirl the cone thrice.
  • Let the coffee bloom for 30 seconds and pour the rest of the water.
  • Let the coffee drip through.

Channi

Brewing Method

  • Add coffee in a channi (stainer) and start pouring 240 ml of hot water gently on top of the coffee.
  • Stir with a spoon and wait for 6 minutes.
  • Remove the channi and your coffee is ready.
