Recipe:

1 Fill the lower chamber of the Moka Pot (the heating vessel) with pre-heated boiling water, just below the safety valve. Bialetti models have a water level mark for reference.

2 Place the coffee funnel on top of the lower chamber and fill it with ground coffee. Do not pack it tightly—use your fingers gently to spread the coffee evenly across the funnel.

3 Screw the upper chamber (the coffee collector) onto the lower chamber. Make sure it’s secure but not too tight, so the rubber gasket isn’t damaged.

4 Brew on the lowest flame possible. Remove the Moka Pot from the stove when about 20–30% of the coffee has collected in the upper chamber. The brew will continue even off the heat.

5 Pour the coffee into a cup or glass right away. For iced lattes, pour over ice and add oat milk to taste.

Brewer’s Notes

For very smooth extraction, you can stop the brewing process before any sputtering occurs by dipping the Moka Pot in a bowl of cold water.
