There’s a moment many of us know well: wanting another cup, but not wanting the full kick that comes with it. We’ve always loved the idea of that brew. But creating one wasn’t as straightforward as we hoped.
The decaffeination methods available to us in India came with a catch. In removing all the caffeine, they also stripped away the depth that makes a cup memorable. Adding artificial flavours was not something we wanted to do, never mind the fact that many of these methods also used far too much water. None of it felt right for us, or for the coffees we work with.
So, we kept looking, searching for a process that could remove most of the caffeine without compromising the sweetness, balance, and complexity that we love.
