ABOUT THE COFFEE
Prakashan has always treated coffee as something to keep learning from. His curious, experimentative lens has introduced us to many remarkable coffees over the years. Exploring how one fermentation can influence another, this special lot is no different.
As coffee cherries ferment, they release a microbe-rich liquid called Mosto. Prakashan and his team collected it from a Gesha they had processed earlier. For this lot, he then used it as a starter culture, guiding SLN 9 cherries through a 72-hour fermentation. Slow drying on raised beds for 25-30 days locked the developments that had set in. The result is a coffee with remarkable complexity and character.
It brews cups that bring a delicate balance of bright, fruity layers and florality, on the nose and in the sip. A silky mouthfeel unwraps notes of pink pomelo, tart cherries, chamomile, and pomegranate. Adding further depth and delight is the gooseberry-like finish.
