Bringing you a sampler pack of special coffees from our very first Central Washing Station in Pulney Hills! All lots were processed using the natural method to enhance their natural sweetness and fruity aromas. You can pick any 3 coffees and add them to your cart. Each Sampler Pack will contain 75 g x 3 pouches.

2022 has been a year of several firsts for us! One of the most exciting projects has been that of the Central Washing Station (CWS) — a post-harvest processing plant to help scale up the quality of coffees grown by small-scale farmers.

We’ve set up and started our very first CWS in the lofty hills of the Western Ghats in Tamil Nadu, making us the first specialty coffee roaster in and from India to experiment with processing coffee through a central washing station.

We picked 5 delicious coffees out of 46 lots and chose to process the lots using the natural method to save water and also to enhance the natural sweetness of the beans. We hope you enjoy them!

About our Central Washing Station

Brewing Method

  • Pre-wet the filter paper and add coffee.
  • Start the timer and pour 100 ml of water.
  • Stir 5 times and let it bloom for 30 seconds.
  • Then, add 140 ml water.
  • At the 2:40 minute mark, plunge slowly.

South Indian Filter

Brewing Method

  • Add coffee into the top chamber and level the bed.
  • Pour hot water on the top, place the lid and let it drip through for 10 mins.
  • You can add sugar, milk or more hot water to your liking.

Moka Pot

Brewing Method

  • Add warm water in the lower chamber and fill the filter with coffee.
  • Screw on the top and place it on the stove on medium heat.
  • Remove from the stove once you hear a hissing sound.

Inverted Aeropress

Brewing Method

  • Pre-wet the filter paper and add coffee.
  • Start the timer and pour 100 ml of water and stir 2-3 times.
  • After 30 seconds, add 140 ml of water and stir 2-3 times.
  • At the 2:30 minute mark, flip the AeroPress and plunge slowly.

Pourover

Brewing Method

  • Rinse filter paper with hot water to preheat the cone. Discard the waste water.
  • Add coffee, start the timer and pour 100 ml water. Swirl the cone thrice.
  • Let the coffee bloom for 30 seconds and pour another 200 ml water slowly and stir twice.
  • Let the coffee drip down.

Channi

Brewing Method

  • Add coffee in a channi (stainer) and start pouring 240 ml of hot water gently on top of the coffee.
  • Stir with a spoon and wait for 5 minutes.
  • Remove the channi and your coffee is ready.

Home Espresso

Brewing Method

  • Add cold water to your machine.
  • Place ground coffee in your basket, and very lightly press and flatten out the grinds with your tamper.
  • Insert the handle into the machine and turn it on to make an espresso.
  • Start the timer and stop the machine 2-3 seconds before the recommended brew time as coffee will continue to drip through.
  • If you’re using scales, the shot should weigh between the suggested range.
  • You can add steamed milk or hot water to taste.
