Recipe:

1 Fold the seam of the filter paper, place it in the cone, and rinse with hot water over your cup. Discard this water and place the cone back on the cup.

2 Add coffee to the filter, level the coffee bed, and create a small divot at the centre.

3 In this two-pour recipe, begin with the first pour of 50g for the bloom. Pour in a gentle circular motion starting from the centre and allow the coffee to bloom until 01:00.

4 At 01:00, start the second pour. Pour the remaining 175g in a circular motion from the outer rim towards the centre.

5 Let the coffee draw down completely. If the flow seems too fast, give the brewer a gentle swirl. Aim for a total drawdown time of 02:45 to 03:00.
