Recipe:

1 Fold the seam of the filter paper, place it in the cone, and rinse with hot water over your cup.
2 Discard this water and place the cone back on the cup.
3 Add 12 g coffee into your filter.
4 Pour 50 g of hot water over the grinds, starting from the centre moving out in circles. Let the coffee bloom for 1 minute.
5 Do a second pour of 50 g, followed by a third pour of 50 g, waiting 30 seconds after each pour. Finish with a slow centre pour of 75 g.
6 At 3:15, take the filter cone off your coffee cup. The water should have just finished dripping through.


Brewer’s Notes
Experiment with a finer grind and a water temperature of 88 °C.
