This year, our packaging introduces you to the many custodians behind India’s highest-scoring coffees. Each release highlights a different role, from pickers and rakers to the many others who see a harvest through.

ABOUT THE COFFEE

Terroir, the unique mix of a place’s soil, climate, elevation, and even its flora and fauna, influences how a coffee grows and tastes. At Ratnagiri, that sense of place goes a step further. The team harnesses microbes from the surface of coffee cherries grown at the estate and develops them into ‘terroir’ cultures in an in-house lab. To bring this special coffee to life, one such culture was put to work. 

Ripe cherries for this lot came from the estate's Godown Patte block, where coffee grows at 1,341 MASL. While picking, brix readings complemented honed instinct. At the sorting stage, both density and colour determined which cherries advanced. Next, an ozonator removed surface microbes before cherries moved to bio-fermenters. This step, a hallmark of Ratnagiri's processing, cleared the way for controlled fermentation. Next, the terroir culture and lactic acid bacteria steered a 48-hour, CO₂-rich ferment. And finally, after 29 days of slow drying, the coffee was ready for milling. 

What entered our roasteries had us all excited. Roasted to a light profile, it brews rose-perfumed cups with rich floral and fruity layers. During cupping, it reminded us of rose, lychee, custard apple, and forest honey. In the finish, the coffee’s floral character stood out again, with a rose tea-like note.  

To take in its complexity, we recommend enjoying this coffee black. You can't go wrong when you brew it as a pour over or using an AeroPress.

The culture process brought out delicate floral aromatics. The coffee is vibrant, layered, and has an elegant, lingering finish.

Ratnagiri Estate

Ratnagiri Estate is a Rainforest Alliance-certified farm located near Baba Budangiri, the birthplace of Indian coffee. Run by Ashok and Divya Patre, the estate has been steadily advancing specialty processing, using modern science as a tool. In recent years, they’ve added a microbiology lab, bioprocessing unit, and climate-controlled drying chamber to the farm.
