These Raw Cocoa & Espresso Brownies are no-bake wonders, combining the decadent flavors of cacao with the robust kick of espresso. Perfectly balanced and made with wholesome ingredients, they’re a treat you can feel good about indulging in.
Ingredients:
- 120 g raw walnuts
- 112 g raw unsalted almonds (roughly chopped)
- 250g dates (pitted)
- 72g raw cacao powder (Mason & Co)
- 1-2 tsp finely ground coffee
- 1 pinch sea salt
Instructions:
- Blend 120g walnuts and almonds in a food processor until finely ground.
- Add the cacao powder coffee grounds and sea salt. Pulse to combine and then transfer to a bowl and set aside.
- Blend dates until they begin to form a paste and set aside.
- Add nut and cocoa mixture back into food processor, add handful dates, and process until a sticky dough is formed.
- Add the mixture to a parchment lined tray, add roughly chopped walnuts on top. Toss to combine and evenly distribute.
- Chill in the fridge for 1 hour before cutting into squares.
- Store in an airtight container in the fridge for up to 2 weeks.
