Banana, Date and Walnut Bread

This wholesome loaf combines the natural sweetness of ripe bananas, the rich, caramel-like depth of dates, and the satisfying crunch of toasted walnuts. You will experience flavours, where the fruity, nutty, and subtly spiced notes come together, making it a versatile addition to your dinner table.

Ingredients:
  • 80ml melted coconut or other cold-pressed oil
  • 125ml honey or jaggery liquid
  • 2 eggs
  • 300g mashed ripe bananas
  • 30g chopped walnuts
  • ¼ cup milk or water
  • 1 teaspoon baking soda
  • 1 tsp baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon, plus more to swirl on top
  • 200g whole wheat flour
  • 100g chopped dates
  • 1 sliced banana (lengthways) for the top
Instructions:
  1. Preheat your oven to 165°C and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together melted coconut oil and honey.
  3. Add eggs, mashed bananas, and milk. Mix until smooth.
  4. Stir in the baking soda, baking powder, vanilla, salt, and cinnamon.
  5. Slowly fold in the flour, walnuts, and dates. Do not overmix.
  6. Pour the batter into the prepared pan. Place the banana slices on top and sprinkle with cinnamon.
  7. Bake for 40–50 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool before slicing.
