- 80ml melted coconut or other cold-pressed oil
- 125ml honey or jaggery liquid
- 2 eggs
- 300g mashed ripe bananas
- 30g chopped walnuts
- ¼ cup milk or water
- 1 teaspoon baking soda
- 1 tsp baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon ground cinnamon, plus more to swirl on top
- 200g whole wheat flour
- 100g chopped dates
- 1 sliced banana (lengthways) for the top
- Preheat your oven to 165°C and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together melted coconut oil and honey.
- Add eggs, mashed bananas, and milk. Mix until smooth.
- Stir in the baking soda, baking powder, vanilla, salt, and cinnamon.
- Slowly fold in the flour, walnuts, and dates. Do not overmix.
- Pour the batter into the prepared pan. Place the banana slices on top and sprinkle with cinnamon.
- Bake for 40–50 minutes or until a toothpick inserted in the center comes out clean.
