The second coffee we’re launching in our Nano-X series is Riverdale Estate’s L.A.B. Natural – processed with lactobacillus as an experiment conducted by producer Prakashan Balaraman, and our Head of Roastery, Tyler Ritchie. They first made in-house bacteria using the rice water method and then divided the ripe cherries for anaerobic and aerobic fermentation. While Prakashan is known to churn out delicious coffees with wine-like and fruity notes, this experiment produced an exciting tropical surprise!

About the farm
Nestled in the Shevaroy Hills of Tamil Nadu, Riverdale Estate has been managed by three generations of the family since 1920. Its producer, Prakashan Balaraman, is one of the front-runners for experimental processing in India and he believes that the secret to good coffee begins with the crop. He’s been challenging traditional growing and processing practices and has previously processed coffees for us where interesting elements like papaya, pineapple and champagne yeast were used.
About the Roaster
Being friends with the producer, our Head of Roastery, Tyler took the liberty to conduct this experiment herself. She had tried a lactobacillus-processed coffee before and wanted to see how the bacteria would interact with the whole cherries from Riverdale Estate. While Prakashan is known to churn out delicious coffees with wine-like and fruity notes, this experiment produced an exciting tropical surprise!
Riverdale Estate is located in the Shevaroy Hills of Tamil Nadu and, since 1920, three generations have worked hard to consistently enrich the quality of coffee that grows here.

Aeropress
Fine grind, slightly finer than sand granules
South Indian filter
Medium fine grind, suitable for filters with small holes.
Moka Pot
Medium fine grind for stovetop espresso makers, also good for single cup pourovers.
Coffee Filter
Used for drip filter machines and two cup pour overs, this is a medium coarse grind like rough sand.
Inverted Aeropress
Medium coarse grind, suitable for 1-2 minute brew times.
Cold Brew
Coarse grind to ease filtration.
French Press
Very coarse grind, similar to sea salt.
