At Ratnagiri, that sense of place goes a step further. The team harnesses microbes from the surface of coffee cherries grown at the estate and develops them into ‘terroir’ cultures in an in-house lab. To bring this special coffee to life, one such culture was put to work. \u003c\/p\u003e\n\u003cp\u003eRipe cherries for this lot came from the estate's Godown Patte block, where coffee grows at 1,341 MASL. While picking, brix readings complemented honed instinct. At the sorting stage, both density and colour determined which cherries advanced. Next, an ozonator removed surface microbes before cherries moved to bio-fermenters. This step, a hallmark of Ratnagiri's processing, cleared the way for controlled fermentation. Next, the terroir culture and lactic acid bacteria steered a 48-hour, CO₂-rich ferment. And finally, after 29 days of slow drying, the coffee was ready for milling. \u003c\/p\u003e\n\u003cp\u003eWhat entered our roasteries had us all excited. Roasted to a light profile, it brews rose-perfumed cups with rich floral and fruity layers. During cupping, it reminded us of rose, lychee, custard apple, and forest honey. In the finish, the coffee’s floral character stood out again, with a rose tea-like note.  \u003c\/p\u003e\n\u003cp\u003eTo take in its complexity, we recommend enjoying this coffee black.
