This year’s harvest from Varadymalai Estate makes for a crisp, clean cup of coffee and is recommended for manual brewing. This light roast has notes of caramelised peach, black tea and green grapes with a long, delicious aftertaste of stone fruit. The coffee cherries at the estate were washed processed to bring out these bright fruit and clean tea-like flavours. 

Started in 1945, Varadymalai Estate spans 2,000 acres, of which close to 400 acres are dedicated to coffee. Varieties of Arabica grown at the estate include S9, Chandragiri and San Ramon. The San Ramon variety, which went into making this coffee, is known for its high productivity, resistance to drought and disease. It has distinct stone fruit characteristics which makes it perfect for washed processing. The estate carefully monitors each step of the bean from harvesting to curing which ensures that the beans that reach us are of the highest quality.

French Press

Brewing Method

  • Add coffee and start timer
  • Pour 50ml of water and stir vigorously for a few seconds
  • At 30 seconds, pour another 190ml of water and cover with lid
  • At 2:35 min, stir a few times, and replace the lid
  • Slowly plunge at 4:00 min
  • Pour in to your cup immediately after plunging to avoid over extracting the coffee

Aeropress

Brewing Method

  • Pre-wet the filter paper, place in the cap and screw on to bottom chamber
  • Using the normal method, place the Aeropress over cup
  • Add coffee, start timer and slowly pour all of the water
  • Stir around 10 times and wait until timer reached 1:30
  • Slowly press over the next 30 seconds

South Indian Filter

Brewing Method

  • Add coffee into top chamber
  • Lightly press 3 times with filter to flatten and compact slightly
  • Pour hot water over top, place lid and let it drip through over 8 minutes.
  • Take the decoction and top up with an equivalent amount of hot water
  • We don't recommend adding milk to this coffee

Brewing Method

  • Place water that is in between boiling and room temperature in the lower chamber and fill filter with coffee.
  • Screw on top and place on stove on medium heat.
  • Remove from stove once you hear a hissing sound
  • Top up with hot water to taste and we don't recommend the coffee with milk

Cold Brew

Brewing Method

  • Add coffee and filtered cold water in 1.5L vessel and stir so all grinds are wet
  • Add lid or cling wrap, leave on bench top at room temp for 18 hours
  • After 18 hours, stir grinds and filter through muslim cloth or cold brew filter

Pourover

Brewing Method

  • Rinse filter paper with hot water to pre-heat cone.
  • Add coffee, start timer and pour 75ml of water to bloom
  • After 30 seconds, slowly pour 75ml more water and stir 3-4 times
  • At 1:00 minutes, slowly pour remains 150ml of water
  • Aim for a total brew time of around 3:20 minutes

Brewing Method

  • Add coffee to vessel and start timer
  • Pour water off the boil and stir for 5 seconds
  • Cover the vessel and allow the coffee to brew for 5:00 minutes
  • Pour through channi and top up with hot water or hot milk to your taste

Brewing Method

  • Place ground coffee in your basket, and very lightly press and flatten out the grinds with your tamper
  • Insert handle into the machine and press the button to start brewing
  • Start timer and stop machine a 2-3 seconds before recommended brew time as coffee will continue to drip through
  • If you are using scales the shot should weigh between the suggested range
  • Add steamed milk or hot water to taste
