The producer, Pranoy, named this coffee 'weaver' to honour the regional Weaver Ants that utilise larval silk for weaving leaves to create their nesting cavities.
For this, Pranoy wove together both honey and washed processes. During the process, the beans were left with a significant amount of mucilage that was allowed to ferment for a longer period before a final wash with fresh water. This process led to a cup with delightful aroma of floral notes and hints of brown sugar. With each sip, the delicate body and the syrupy mouthfeel can be felt, brought forward by the extra mucilage. The coffee ends with a long, lingering tea-like aftertaste — a truly delightful coffee experience.

Aeropress

Brewing Method

  • Pre-wet the filter paper, add coffee, and lock the cap into the chamber.
  • Start the timer and add 60 ml of water.
  • Swirl 5 times and let it bloom for 30 seconds.
  • Pour the rest of the water. Put the plunger on top and press down slightly to create a vacuum.
  • When it reaches the 2:10-minute mark, plunge slowly for 30 seconds to extract the flavours into the cup.

Moka Pot

Brewing Method

  • Add warm water in the lower chamber and fill the filter with coffee.
  • Screw on the top and place it on the stove on medium heat.
  • Remove from the stove once you hear a hissing sound.

Brewing Method

  • Pre-wet the filter paper, add coffee, and lock the cap into the chamber.
  • Start the timer and add 70 ml of water and stir 3-5 times.
  • After 30 seconds, add the rest of the water.
  • When it reaches the 3-minute mark, flip the AeroPress and plunge slowly for 30 seconds.

Brewing Method

  • Rinse the filter paper with hot water to pre-heat the cone.
  • Add coffee and start the timer. Pour 60 ml of water and swirl the cone thrice.
  • Let the coffee bloom for 30 seconds and pour the rest of the water.
  • Let the coffee drip through.
