The producers then used a starter made from the farm's local microbes to aid fermentation. Monitoring temperature and pH regularly, they finished within 37 hours. Next, the coffee was mechanically washed and dried in the shade for three days. Finally, 12 days of polyhouse drying on raised beds locked its flavour.
