We are looking for organizationally-minded chef with excellent leadership skills to run our Mumbai food program. After undergoing training on our recipes in Delhi, the chef will be responsible for executing the menu across our network of cafes in Mumbai. We are looking for someone who enjoys working on the operational aspects of running a kitchen as much as they enjoy cooking.
Specific responsibilities will include:
Execute company-developed menu across multiple locations
Ensure plating and portion sizes meet standards and develop pictorial menu to ensure consistency
Source and negotiate with suppliers for food, equipment and crockery required
Implement crockery and packaging solutions for in cafe service as well as to-go and delivery orders
Adapt and/or change recipes in response to customer feedback, rectify problems involving complaints
Create systems for monitoring ordering, consumption and wastage
Manage costing for food
Troubleshoot all operational issues
Participation and inputs towards Food Marketing activities
TRAINING AND HIRING
Assist with recruitment of kitchen team
Train all new kitchen staff and train existing staff on new menu offerings and systems
Oversee scheduling and kitchen team administrative activities across base kitchen and cafe kitchens
Teaching staff how to create food in an efficient manner using teamwork
Emphasize cleanliness and hygiene in all food operations and develop checklist systems to ensure constant adherence to these standards
Establish relationships with vendors for respective items
Compare prices of vendors in the same field
Set up quality control measures for items being received
Optimize inventory management by selecting vendors based on location
4+ years experience in a similar role
MUST BE WILLING TO SPEND 3 WEEKS TRAINING IN DELHI/JAIPUR
Post Graduate or Degree or three years Diploma in hotel Management or equivalent.
Computer skills, specifically Excel and/or other spreadsheet software
COMPENSATION: The salary will be competitive with industry standards.
